Jon’s Valentines recipe: All you need is love – oh, and chocolate!

Jon Fell, White Mare head chef, has put aside his love of seafood to tell us the way to that special someone’s heart this Valentines Day is chocolate – and his quick, easy and simple recipe is just the trick you need!

Now I know I’m known for seafood, but you can’t eat seafood all the time. Sometimes you need CHOCOLATE – you know I’m right.

And what better way to indulge your beautiful valentines than with a stunningly delectable Soft Centred Chocolate Fondant.

The other thing I know is that Chocolate Fondants aren’t as hard as people think to make, you just need to have patience, I don’t have any patience and I can still make them.

So come on, what are you waiting for?

This recipe will make 6 Fondants

Preparation approximately 25 minutes

Cooking time 12 minutes

● 150 g soft butter
● 3 medium eggs plus 3 egg yolks
● 50 g of golden caster sugar
● 175 g good quality dark chocolate
● 50 g plain flour
● 6 chocolate truffles (optional)

1. Firstly preheat your oven 180°C
2. Lightly grease the cups, ramekins or something to use as dishes
3. Beat together the eggs, egg yolks and sugar, use an electric mixer it’ll be so much easier. Whisk till pale and fluffy
4. Melt the chocolate and butter over a pan of simmering water
5. Now stir in the melted chocolate into the egg mixture
6. Gently fold in the flour
7. Put a spoonful of the mixture into each ramekin, and place a truffle in each (if using)
8. Divide the remaining mixture between each ramekin
9. Bake for 12 minutes until the top is firm and risen
10. Serve warm with clotted cream
